Place the sugar and ground cinnamon in a small bowl and whisk until combined.
Mash the cooled cream cheese until it becomes smooth. Pour in the sugar, egg, and vanilla, and keep mixing until everything is combined. Reserve this concoction.
Spray nonstick cooking oil over a 9x13" baking pan. On the base of the pan, evenly distribute half of the cinnamon sugar.
After opening the can of dough, spread it out on floured wax paper and press the seams firmly. Carefully slide into the pan, leaving an ample overhang.
Spread the cream cheese mixture evenly over the dough layer.
Unroll the second can of dough and roll it out again. Arrange this layer on top of the cream cheese.
Divide the remaining cinnamon sugar evenly among the servings. To get a light brown color, bake in a preheated oven at 350°F for about 30 minutes.
Let it cool completely before cutting it into bars.
