one cup (240 milliliters) of soy milk
half a cup, or 120 g fruit puree

1/4 cup of vinegar
Vegan mascarpone, 2 teaspoons of vanilla essence
2 cans of coconut milk, each 13.5 ounces, refrigerated overnight (or 270 milliliters of vegan whipped cream)
3 tablespoons powdered sugar, also known as erythritol,
1.5 cups (225 grams) soaking cashews
60 milliliters (120 ml) milk made from plants
4 tablespoons (80 grams) maple syrup or any other preferred liquid sweetener
1.5 teaspoons of vanilla extract
One dash of salt
Additional Substances:
At room temperature, stir in 1 and 1/4 cups (300 ml) of strong coffee.

Delicious Vanilla Cake:
Before you begin, have your oven preheated to 360°F, or 180°C. Grease or line two 8-or 9-inch (20 cm) square baking pans.
The dry cake ingredients should be mixed together in a bowl.
Before combining the dry and wet components, puree the wet ingredients in a blender.
Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean, after dividing the batter evenly among the oven-ready pans. Allow it to cool.

Dairy-Free Mascarpone:
Remove the water from the cooled coconut milk and transfer the solid cream to a mixing dish.
Toss in the powdered sugar and continue beating until the mixture is wonderfully airy. Store in the fridge.
Combine soaked cashews, soy milk, maple syrup, vanilla essence, and salt in a blender and process until smooth.
Mix the whipped coconut cream with the cashew cream gently.
Putting together:
Mix the coffee liqueur with the cooled coffee in a bowl.
Before layering the cake slices in a baking dish, dip each slice into the coffee mixture on one side.
On top of the cake layer, spread half of the mascarpone cream.
Layer the cake slices again when they have soaked, and then cover with the rest of the mascarpone.
Chill for at least three hours, preferably overnight, after covering with plastic wrap.
Sprinkle some chocolate powder on top before you dig in.
Importance of:
You may skip baking the cake and just use store-bought ladyfingers.
An overnight or three-hour soak in cold water is recommended for cashews.
A substitute for coffee liqueur or maple syrup flavored with rum might be rum.
