Combine the dry ingredients: Combine the flour, baking soda, cinnamon, and salt in a medium basin and mix with a whisk. Toss in some nutmeg if you're using it.
Softened butter, granulated sugar, and brown sugar should be creamed together in a separate large basin for two to three minutes, or until the mixture is light and fluffy.
Mix in the vanilla and egg: With a mixer on high, blend the egg and vanilla essence.
Add the dry ingredients. While whisking constantly, slowly incorporate the flour mixture into the liquid components.
When adding chopped apples and oats, gently incorporate them into the dough. Because apples contain moisture, the dough will have a somewhat sticky texture.
Drop rounded tablespoonfuls of dough, approximately 2 inches apart, onto the prepared baking sheet with a cookie scoop or tablespoon.
Cook: Put the cookies in the oven and cook for 10 to 12 minutes, or until they become brown and firm.
After 5 minutes of cooling on the baking sheet, move the cookies to a wire rack to finish cooling.
Advice: Rich, vanilla fudge

Apples: Any kind of apple will do, but for the perfect harmony of sweet and sour, choose Granny Smith, Honeycrisp, or Fuji.
