A Traditional Recipe for Hearty White Bean and Ham Hock Soup


Bean preparation: Soak dried beans in water for at least one night before using, and then pat them dry. This shortens the cooking time while softening the beans. To save time, you may alternatively use beans from a can.

To prepare the ham hocks for cooking, place them in a big saucepan with the chicken or vegetable stock and bring to a boil. After the mixture boils, turn the heat down to low. Let it simmer for around 1 to 1½ hours, or until the ham hocks get soft and begin to decompose.

While the ham hocks are in the oven, put a little oil in a pan over medium heat and sauté the veggies. Toss in the garlic, carrots, onions, and celery and sauté for five to seven minutes, or until the vegetables are tender and aromatic.

After the ham hocks have cooked in the broth until they are soft, combine them with the sautéed veggies, soaking beans, bay leaf, and thyme. Gently simmer for a further 1 to 1½ hours, or until the beans are tender and the soup has reduced in thickness, after which bring to a boil.

Finish by taking the ham hocks out of the soup and shredding the flesh off the bone. Season to taste. After removing the meat from the saucepan, discard the bones. Adjust the seasoning with salt and pepper according to your taste. To get a thicker soup consistency, crush a few beans against the pot's edge to extract their starches.

Garnish each dish with a ladleful of soup and some fresh parsley, if preferred. To make it a whole dinner, serve with some crusty bread.
