Priming the Poblano Peppers
To bring up their distinctive smokey taste, roast the poblano peppers beforehand. Set the oven temperature to 400°F, or 200°C. To get blackened skin, roast the peppers on a baking sheet for 10 to 15 minutes, tossing them halfway through. Once taken out of the oven, transfer the peppers to a plastic bag and let them sit for about 10 minutes. The skins will be simpler to pull off after this. After peeling, take the peppers out of their pods and slice them into little pieces.
Step 2: Get the Soup Base Ready
Warm the olive oil in a big saucepan over medium heat. After a few minutes of sautéing, add the minced garlic and onion and continue cooking until they are gentle and aromatic. Simmer gently after adding the chicken broth. Add the roasted poblano peppers that have been chopped.
Step 3: Incorporate Cheese and Cream
Stir in the heavy cream or half-and-half and turn the heat down to low. To make the soup thicker, combine the cornstarch with a little cold water and add it to the soup. When the Monterey Jack cheese has melted and the soup has thickened, add it slowly while swirling constantly. Taste and add salt and pepper as needed.
Fourthly, toast the cheese topping.
Get your broiler ready. Transfer the soup to dinner plates or individual ovenproof bowls. Scatter a mountain of shredded cheddar cheese over each plate. To get the bubbling, golden brown cheese look as in the pictures up above, broil the bowls for two or three minutes.
