The amount of time needed to prepare: 10 minutes.
Cooking Time: Half an hour
Downtime: two to three hours
Duration: three to four hours
Things needed:
1 gallon (or 4 cups) total milk
The ezoic
2 teaspoons of white vinegar or lemon juice
1/4 teaspoon of salt
10 grams of butter, if desired, to add creaminess
For seasoning, you may optionally add ezoic herbs or spices.
What to do:
Make the milk hot:
In a large saucepan, gently bring 1 liter of milk to a simmer over medium heat. To avoid burning, stir from time to time.
The milk should be heated to a temperature of 85°C (185°F), or just below boiling.
The ezoic
Toss with some vinegar or lemon juice:
Whisk in 2 tablespoons of vinegar or lemon juice after the milk has heated through. Take it from the heat. As curdling begins, the milk will separate into solid curds and watery whey.
The ezoic
Temper the Milk:
Cover and let rest for 10-15 minutes to let the curds completely develop after gently stirring for a few seconds.
Pour the curdled milk through a cheesecloth or clean kitchen towel set over a strainer to remove the whey and drain the curds. After 30 minutes, the curds should be soft, but if you want a harder cheese, you should let them drain for a little longer.
