spoonful of olive oil
Italian sausage, either mild or spicy, 1 pound
one sliced tiny onion
2 minced cloves of garlic
Diced celery (two ribs) and one big carrot
One can of chopped tomatoes, not drained (14.5 oz.)
Spoonful of dried oregano...
half a spoonful of pesto
1/2 teaspoon of optional red pepper flakes
Quarts of chicken stock
3 tablespoons of orzo
Roughly cut 2 cups of fresh spinach.
For seasoning, add salt and pepper to taste.
Season with freshly grated Parmesan before serving.
Instructions
In a big saucepan, warm the olive oil over medium heat. Brown the sausage by adding it to the pan after breaking it into pieces. Remove any surplus of fat.
