Melt the butter and 1 cup of chocolate chips in a microwave-safe dish, stirring every 30 seconds, until smooth. Let sit for a while to cool down.
Combine Wet Ingredients: In a big basin, mix the brown sugar, eggs, and vanilla essence until well mixed.
Melt the chocolate and add it to the egg mixture, stirring constantly until combined.
Sift in the cocoa powder, salt, baking soda, flour, and flour. Add the dry ingredients. Mix until a dough forms, then set aside.
Scoop out about 2 teaspoons of dough for each cookie and press it down slightly to form it. Form a ball by folding the dough around a few chocolate bits placed in the middle. Arrange the dough balls on the baking sheet that has been preheated.
Ten to twelve minutes in the oven should be plenty to crackle the tops and firm the edges while keeping the middle moist. Be cautious not to bake for too long!
Finish Cooling: After the cookies have cooled for about 5 minutes on the baking sheet, move them to a wire rack to finish cooling. The luscious lava core is best enjoyed when served warm.
