"Sausage and White Bean Soup"


The looks on my family's faces when I brought out a steaming bowl of my sausage and white bean soup last night were priceless. Their expressions of delight and astonishment changed the color of their eyes the moment they bit into it. Witnessing their excitement and the bond it formed among us as a result of the meal was a very touching experience. 
Things needed:
- 1 pound of Italian sausage - 1 chopped onion - 3 minced garlic cloves - 1 can of washed and drained white beans - 1 can of diced tomatoes
chicken broth (four cups) and dried basil (one teaspoon)
Add pepper and salt to taste. If desired, garnish with grated Parmesan cheese.
Instructions:
1. In a big saucepan, brown the Italian sausage over medium heat. Toss in the minced garlic and onion and heat until aromatic.
Pour in the chicken broth, white beans, diced tomatoes, dried basil, salt, and pepper. Stir to combine. Simmer, covered, for 20 minutes after bringing to a boil.
