White bean and ham hock soup



What's in it? 

Nearly half a kilogram.Using uncooked navy beans

45 cubic meters of water, room temperature.

As much salt as you like.

Extra-virgin olive oil, 2 tablespoons.

1 big, coarsely sliced yellow onion.

finely sliced two little carrots.


Roughly cut two ribs of celery.

Roughly chop two medium cloves of garlic.

Fresh thyme; I used two stems.

Parsley, finely chopped.

A single bay leaf.

Two big hocks of smoked ham.

Cracked black pepper, freshly picked.

Step one of preparation is to fill a 4-quart saucier with water and beans. Add salt to taste. Bring to a boil over high heat. Cover and remove from heat; let it settle for one hour. When they are dry, set them aside.
