Ingredients:
5 carrots, peeled and chopped
3 onions, chopped
2 (16-ounce) cans whole peeled tomatoes (with liquid)
1 large head of cabbage, chopped
1 (1-ounce) envelope dry onion soup mix
1 (15-ounce) can cut green beans, drained
2 green bell peppers, chopped
3 celery stalks, sliced
6 cups of water or vegetable broth
Salt and black pepper to taste
Optional: A pinch of red pepper flakes for heat
Instructions:
Prepare the Vegetables
Wash and chop all the fresh vegetables (carrots, onions, cabbage, bell peppers, and celery).
Cook the Base
In a large pot, combine the carrots, onions, canned tomatoes (with their liquid), and cabbage. Add the green beans, bell peppers, and celery.
Add Seasoning
Sprinkle the dry onion soup mix over the vegetables. Pour in the water or vegetable broth until all the vegetables are covered. Season with salt, black pepper, and optional red pepper flakes.
