Ingredients

1 onion (whole, peeled)
1 carrot (peeled, cut into large chunks)
2 stalks of celery (cut into large chunks)
3 chicken legs (skin on, bone-in for maximum flavor)
Water (enough to fill the pot)
1 additional onion, diced (optional, for added depth)
Instructions
Prepare the Ingredients

Peel and trim the onion, carrot, and celery. No need to dice them finely, as they’ll be simmered for flavor.
Cook the Chicken

Place the chicken legs into a large pot. Add the whole onion, carrot chunks, and celery.
Add Water

Fill the pot with water until the ingredients are fully submerged, leaving about 2 inches of space from the rim.
Simmer the Soup
