Ingredients:
1 small onion, diced
2 cloves garlic, minced
1 lb ground beef
4 tbsp unsalted butter, divided
2 medium carrots, shredded
2 celery stalks, diced
3 cups chicken broth
4 cups peeled and diced potatoes (about 2-3 medium potatoes)
1/4 cup all-purpose flour
2 cups whole milk
2 cups shredded cheddar cheese
1/2 teaspoon dried parsley (optional)

Instructions:
1. Cook the Ground Beef:
In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess grease and set the beef aside.
