Put the sausage back in the saucepan once it has cooked with the potatoes. Add the chopped kale and cook, stirring occasionally, for 5 minutes, or until the kale wilts.
After adding the heavy cream, turn the heat down to low and whisk. To taste, add salt, pepper, and, if you want, red pepper flakes. Return to a simmering boil after heating.
If you want it spicy, top with more red pepper flakes before serving hot.
It will take 10 minutes to prepare, 30 minutes to cook, and 40 minutes to complete.
