Ingredients

  • 1 box (3.4 oz) instant pistachio pudding mix

  • 1/2 cup vegetable oil
  • 1 cup crushed pineapple, drained (reserve juice)
  • 1/2 cup reserved pineapple juice (or water if needed)
  • 1/2 cup chopped pistachios, plus extra for garnish

For the Frosting:

  • 1 package (3.4 oz) instant pistachio pudding mix
  • 1 1/2 cups cold milk
  • 1 container (8 oz) whipped topping (like Cool Whip)
  • 1/2 cup crushed pineapple, drained

  2. Grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.
