  • 1 medium onion , thinly sliced
  • 1 green bell pepper , thinly sliced (optional)
  • 2 tbsp olive oil (or butter, divided)
  • Salt and pepper , to taste
  • 4–6 keto-friendly tortillas (or egg wraps like Crepini or Cloud Bread)
  • 4 slices provolone cheese (or shredded mozzarella for melting)

Step-by-Step Instructions

Step 1: Caramelize the Onions and Peppers

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and bell pepper (if using). Cook, stirring occasionally, for 8–10 minutes , or until softened and caramelized. Remove from the skillet and set aside.

Step 2: Cook the Beef

  1. In the same skillet, add the remaining olive oil. Increase the heat to medium-high and add the thinly sliced beef. Season with salt and pepper. Cook for 3–5 minutes , breaking it apart with a wooden spoon, until browned and cooked through.
  2. Stir the caramelized onions and peppers back into the skillet with the beef and mix well.

Step 3: Assemble the Roll-Ups

  1. Lay out a keto tortilla or egg wrap on a flat surface. Place a slice of provolone cheese (or shredded mozzarella) in the center, followed by a generous portion of the beef mixture.
  2. Fold the sides of the tortilla inward, then roll it up tightly like a burrito. Repeat with the remaining tortillas and filling
